Recipe creations: Turkey burger with peach cranberry chutney

If you're trying to eat lighter and healthier but miss those grilled hamburgers, this is the recipe for you. This recipe is very similar to the one that Oprah had on her show years ago and declared as her favorite turkey burger. Serve with the usual condiments, but if you want something a little different, try the peach cranberry chutney. It's best to prepare this two hours ahead of time, or even the day before. Just refrigerate until the grill is hot and ready.

Turkey Burger

Ingredients

• 1/8 cup thinly sliced scallions

• 1/4 cup finely chopped celery

• 2 Granny Smith apples, peeled and diced

• 2 tbsp. canola oil

• 3 pounds ground turkey

• 1 ½ tbsp. salt

• ¾ tbsp. black pepper

• 1 tsp. pepper sauce

• 1 lemon, juiced and zest grated

• 1/4 bunch parsley, finely chopped

Directions

Sauté the scallions, celery and apples in the canola oil until tender. Let cool.

Place the ground turkey in a large mixing bowl. Add sautéed items and remaining ingredients. Shape into six burgers. Refrigerate for two hours.

Season the turkey burgers with salt and pepper. Place on a preheated, lightly oiled grill. Grill each side for five to seven minutes until meat is thoroughly cooked. Let sit for five minutes before serving.

Peach Cranberry Chutney

Ingredients

• 1/2 cup packed brown sugar

• 1/2 cup apple cider vinegar

• 2 tbsp. chopped crystallized ginger

• 1/8 cup chopped onion

• ¾ tsp. chili powder

• 1/8 tsp. salt

• 3 large peaches, pitted, peeled and diced

• ¼ cup dried cranberries

Directions

Place all ingredients into a saucepan and simmer for one hour until the chutney is a caramel brown color and reduced by half. Cool and serve.
