Mia Carolina is a restaurant that had slipped under my radar before it underwent a major facelift this summer. An Italian restaurant with an owner and chef named Jay Cohen in a strip mall in Glyndon -- I wasn't inspired to rush right out and try it.
But after the renovations, I got a couple of e-mails from Cohen telling me about the changes and asking for a review. The changes, which included a new wine shop in front and the complete redoing of the dining rooms, weren't just physical. He also wanted to make Mia Carolina less of a trattoria and more of a fine dining restaurant.
