Holly Clegg, who has written a series of Trim&Terrific; cookbooks, offers recipes that are quick, easy and what she calls "pantry friendly."

And, like Haas, Clegg has based most of her recipes on fresh fruit and vegetables. But neither book, with the exception of the recipes provided by the pros, does enough with fresh herbs, spices or unusual pairings to liven these dishes.

Finally, there is good news for diabetics and the rest of us who worry about sweets: plenty of recipes in each book for desserts.

The proceeds from both books go to the American Diabetes Association.

Mediterranean Layered Spread

Serves 8 (serving size: 1/2 cup)

one 7-ounce container hummus

1 cup coarsely chopped fresh baby spinach

1/2 cup chopped tomatoes

1/2 cup chopped cucumber

1/4 cup chopped red onion

1/4 cup crumbled reduced-fat feta cheese

2 tablespoons sliced kalamata or black olives

Spread the hummus on a 9-inch serving plate.

Sprinkle evenly with the remaining ingredients and refrigerate until serving time.

Note: Look for different containers of flavored hummus to give this recipe extra punch.

Per serving: 61 calories; 3 grams fat, 1 gram saturated fat, 2 milligrams cholesterol, 189 milligrams sodium, 5 grams carbohydrate, 2 grams fiber, 3 grams protein
