Even if the turkey is still defrosting in the refrigerator, it isn't too soon to think about leftovers.

Glad, the company that specializes in food-storage bags, asked chefs from around the country for suggestions on what to do with holiday leftovers, and here are a couple of suggestions:

* Make turkey and stuffing cakes. Chef Gary Danko in San Francisco suggests using leftover stuffing and shredded turkey to making "stuffing patties." Stir in one beaten egg, shape into patties and fry on both sides in a bit of vegetable oil. Serve with turkey gravy.

* Mix a Winter Turkey Salad. Chef Amen Jeghelian of San Francisco suggests dicing two cups of turkey into cubes and mixing it with mayonnaise, salt and pepper. Then add 1/2 cup each of stuffing, peas, chopped celery and pearl onions. This can be served cold, at room temperature or slightly warmed.
