Sara R. Knowles of St. Augustine, Fla., requested a recipe for cabbage soup "like the one we enjoyed at Big Boy restaurants in Ironwood, Mich."
She added, "I love soup, and nothing I've found can come close to this soup. I'd appreciate help in getting that one or something close to it."
Margaret S. Waring of Baltimore responded with tester Laura Reiley's choice.
Makes 3 quarts, serves 8
1/2 teaspoon garlic salt
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
2 celery stalks, chopped
one 16-ounce can kidney beans, undrained
1/2 large head of cabbage, chopped
one 28-ounce can chopped tomatoes, undrained
28 ounces water (use tomato can for measuring)
2 to 4 bouillon cubes, to taste
chopped fresh parsley
Combine all ingredients except parsley in a large stockpot. Bring to a boil, reduce heat and simmer, covered, for one hour. Garnish with parsley. Soup can be frozen.
Tester Reiley's comments: "A simple, hearty soup, it is a meal by itself, but it can be jazzed up in a number of ways. At service time, put out little bowls of grated cheddar cheese, sour cream, maybe croutons to add a little crunch. Spicy food fans may want to keep the Tabasco nearby, as a little spice adds a lot to the tomato-y broth. I might increase the amount of cabbage to a whole small head, but this is a matter of preference. I think 4 bouillon cubes would make the broth too salty, but taste for seasoning periodically as the soup simmers."
Helen M. Huebel of Parkville is seeking a recipe for Accordion Treat cookies. "I lost my recipe many years ago and have scoured cookbooks and papers hoping to find it again," she wrote. "It was a very tender cookie and the batter was poured into accordion pleated aluminum foil to bake."
