A little trifle for the dieter Desserts: This delectable layered dish needn't be high in fat.


Exactly what is a trifle, and is there any room for a slice in a low-fat diet?

First off, a trifle is a layering of cake, filling and whipped topping that is served in a glass bowl or trifle dish. That's what makes a trifle so appealing for parties. The presentation of the different-colored layers in your glass trifle bowl can be dazzling.

Second, although you might find it a little hard to believe, the following trifles are all low in fat, less than 10 grams per slice. So, indulge yourself and your guests without guilt.

Pineapple Trifle

Serves 10 to 12

12 ounces light cream cheese

2/3 cup sugar

2/3 cup evaporated skim milk

1 (16-ounce) store-bought angel food cake, cubed

1 (20-ounce) can crushed pineapple, including juice

2 tablespoons cornstarch

1 (8-ounce) container frozen light whipped topping

In mixing bowl, beat cream cheese, sugar and evaporated milk until creamy. Fold into cubed angel food cake.

In small saucepan, combine pineapple and cornstarch. Cook over low heat until thick, about 10 minutes, stirring constantly. Set aside.

In trifle dish or glass bowl, layer half of angel food cake mixture, half of pineapple mixture and half of whipped topping. Repeat layers, ending with whipped topping. Cover and refrigerate.

Garnish with fresh strawberries or blueberries, if desired.

Per slice: 313 calories; 20 milligrams cholesterol; 8 grams fat; 22 percent of calories from fat.

Chocolate Trifle

Serves 16

1 package reduced-fat devil's food cake mix

1 1/3 cups water

1 large egg

2 large egg whites

1 (6-serving) package instant chocolate pudding

3 cups cold milk cup coffee-flavored liqueur or coffee flavoring

1/2 cup chopped English toffee bars

1 (8-ounce) container frozen light whipped topping, thawed

Coat 2 (9-inch) round baking pans with nonstick cooking spray and dust with flour. Combine cake mix, water, egg and egg whites in mixing bowl and beat 2 minutes.

Pour batter evenly into prepared pans. Bake at 350 degrees 25 to 30 minutes until wooden pick inserted in center comes out clean. Let cool and then remove cakes from pans to cool completely

In mixing bowl, combine pudding mix and milk and prepare according to package directions. Refrigerate to chill mixture.

To assemble, place 1 cake layer in bottom of trifle dish, then sprinkle with half of liqueur, half of toffee bars, half of pudding and half of whipped topping. Repeat layers.

Per slice: 263 calories; 17 milligrams cholesterol; 8 grams fat; 26 percent of calories from fat.
