When Tina Paul saw a group of merchants attempting to revitalize the Poppleton area in West Baltimore where she grew up, "I wanted to be part of it," she said. So, three weeks ago, she opened Truly Scratch, a bakery that specializes in dishes baked from memory and by taste, as opposed to strictly following a recipe.
"Either you know how to do it or you don't," Ms. Paul said.
She's joined in the enterprise by her mom, Elaine Paul -- "She was my teacher" -- plus her husband, Tom Pendleton, and sons Cody and Thomas III.
Dishes include sweet-potato, apple, pecan and cherry pies, and "old-fashioned cookies," such as oatmeal-raisin, chocolate chip and butter cookies. And there's a Jewish apple cake with orange juice. "We try to include any kind of ethnic dish we can," Ms. Paul said. "We do some Palestinian dishes."
And if you don't see what you want in the case, simply give Ms. Paul a recipe. "We'll prepare it for you," she said.
The shop, at 1041 W. Baltimore St., is open from 7 a.m. to 7 p.m. Monday through Saturday, and from noon to 5 p.m. on Sunday. For more information, call (410) 547-7674.

American fare Czechs in
The Potomac is appearing in Czechoslovakia, and Stouffer Renaissance Harborplace Hotel's executive chef, Guy Reinbold, is helping. Mr. Reinbold helped design a menu and train the staff for the new "Potomac" restaurant in the Prague Renaissance Hotel, which is gearing up to serve an increasing number of Americans doing business there.
Among items on the menu: Senate bean soup with ham hock crackling, pan-seared duck breast with oven-dried cherries and mixed greens, grilled swordfish with orzo timbale and jerk-spiced sauce, and warm apple cobbler with roasted streusel topping.
The restaurant, a replica of Stouffer's Windows, opened a week ago.
