Local company shows you 'How To Change Your Oil'

Pompeian Olive Oil of Baltimore offers a free booklet called "How To Change Your Oil" that offers tips and recipes for using olive oil instead of butter -- a switch to unsaturated fat from cholesterol-raising saturated fat.

Learning to cook the low-fat, low-cholesterol, low-sodium way can be slow going as home cooks struggle with unfamiliar seasoning and techniques. "Lighthearted Everyday Cooking" by Anne Lindsay (MCM Books of Canada, $16.95) can make life a little easier. The more than 200 tasty-sounding and simple-to-fix recipes include curried rice and salmon salad, citrus quinoa salad and peach shortcake. All have nutritional data. Here's a sample, perfect for the season:

Grilled lemon chicken with rosemary

Serves four

4 boneless, skinless chicken breasts

1/4 cup lemon juice

2 large sprigs fresh rosemary or 1 tablespoon dried

pepper to taste

In shallow dish, arrange chicken in single layer. Pour lemon juice over chicken and turn to coat both sides. Separate rosemary needles from stem; sprinkle needles over chicken. Season with pepper to taste.

Let stand at room temperature for no more than 20 minutes, or cover and refrigerate up to 6 hours. Spray grill with nonstick vegetable coating. Grill chicken over hot coals or on medium-high setting for 4 to 5 minutes on each side, or until meat is no longer pink inside.

* "Baltimore's largest outdoor crab deck," a re-creation of an old-time Eastern Shore fishing wharf, will be open any day now in the East Harbor area south of Little Italy. The Boathouse & Crab Deck, 515 S. Eden St., is owned by Tom Douglas and Jim Mikula, owners of Weber's in Canton and Bohager's, which is next door to the new place. The crab deck will feature a full seafood menu and raw bar; Tuesday nights, there will be specially priced "all-you-can-eat" crabs. For reservations and more information, call (410) 675-3808.

* Donna Crivello and Alan Hirsch, partners in Donna's coffee bars and restaurants, are planning to open a carryout coffee, pastry, salad and sandwich shop at Calvert and Centre streets, in Waterloo Place about midmonth. The shop will be open from 7 a.m. to midafternoon. About the same time, they'll also establish tTC a "coffee cart" at the Rotunda shopping center, 711 W. 40th St., that will offer cappuccino, espresso, muffins, scones and Donna's biscotti.
