Salmon with summertime simplicity Fillet, vegetable grillwork makes for easy cleanup


For some dazzling flavors filled with summer's essence, try this simple meal on the grill that leaves you free from pot-washing and cleanup. Salmon fillets are coated with a zesty four ingredient mixture that is pleasantly reminiscent of sweet and salty teriyaki. The honey causes the shiny golden glaze as it grills.

Whole vegetables thinly sliced cook very quickly on the grill and pick up a nice smoky flavor. Cut them about 1/2 -inch thick in lengthwise slices. Choose from zucchini, crookneck squash, eggplant, onions, tomatoes, bell peppers of any color, sweet potatoes or white potatoes.

It is best to microwave a potato of medium size about 2 minutes before slicing so that it cooks in the same amount of time as the other vegetables. The vegetables can be brushed with olive oil, then sprinkled with salt and pepper. Pepper blends or freshly ground peppercorn medleys add a lively dimension.

When working with medium to hot coals, the vegetables cook quickly and will be done when they are lightly browned on each side.

Unadorned biscuits are the perfect base for the summer short cakes. Toss your preferred mixture of fresh berries with a bit of sugar and let that sit to yield some flavorful juices while you grill the dinner.

Items you should have as staples are: garlic, soy sauce, honey, onions, potatoes, tomatoes, sugar.

4 (6 ounce) salmon fillets, skinned

vegetables to grill such as: zucchini, crookneck squash, tomatoes eggplant, sweet potatoes, potatoes, mushrooms

assorted fresh berries, biscuits or shortcakes

heavy cream for whipping

Glazed grilled salmon fillets

Serves 4.

4 (6 ounce) salmon fillets, from center cut, skin removed

3 cloves fresh garlic, minced

3 tablespoons soy sauce

1/3 cup honey

2 tablespoons lime juice

Heat grill or have coals glowing red. Brush grill rack with oil and place about 3 inches from heat.

Place salmon fillets in shallow bowl or plate.

While grill is heating, mix garlic, soy sauce, honey and lime juice and pour over salmon. Let marinate for 15 minutes.

Place salmon fillets on grill over hot coals and cook about five to six minutes on top, while basting with marinade mixture. Turn and grill for the same amount of time on the bottom side, basting again. Serve immediately, surrounded with grilled vegetables.
