Dolores Doyles of Baltimore gets high marks for finding this pumpkin whoppie pie recipe. She says she got the recipe from an Amish farmer in Pennsylvania. "They make the tastiest whoopie pies," she says.
The recipe is for Daisy Wurtz of Sunbury, Pa.
Mrs. Doyles asks that someone please find her a recipe for Amish macaroni salad, similar to that sold at Mars Supermarkets. Recipe Finder has run her request before and received many delicious macaroni salads, but none were "quite right" according to Mrs. Doyles.
Pumpkin Whoopie Pie
2 cups canned pumpkin
2 egg yolks
2 cups brown sugar
1 cup vegetable oil
1 teaspoon cloves
1 teaspoon cinnamon
1 teaspoon ginger
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon vanilla
3 cups flour
Combine pumpkin, yolks, sugar and oil. Beat well. Add remaining ingredients and mix well. Drop by teaspoon on ungreased baking sheet. Whoppie pies will spread some so don't place them too closely together. Bake in a preheated 350-degree oven for eight to ten minutes, watching carefully so they don't burn. Let cool completely before spreading with frosting.
2 egg whites
2 teaspoons vanilla
4 tablespoons flour
2 tablespoons milk
1 1/2 cup vegetable shortening
1 pound box confectioners sugar
Beat egg whites until stiff. Add vanilla, flour and milk. Beat well, adding shortening and gradually adding sugar. The more you beat the fluffier the icing will become.
