Here's a muffin recipe that lives up to its good-for-you name!
Good-For-You Muffins
1 1/2 cups rolled oats
3/4 cup whole-wheat flour
1/2 cup all-purpose flour
1/2 cup packed brown sugar
3 tablespoons oat bran
1 1/2 teaspoons baking powder
1 teaspoon ground cinnamon
3/4 teaspoon baking soda
1/4 teaspoon salt
1/3 cup raisins or currants
1/3 cup broken dried banana chips
1/4 cup snipped pitted dates
1/4 cup chopped walnuts
1 cup milk
1/4 cup cooking oil
2 slightly beaten egg whites
In large bowl stir together first nine ingredients. Add raisins, banana chips, dates and nuts. Stir to coat.
Combine remaining ingredients; add to flour mixture. Stir until moistened. Spray 12 muffin cups with PAM. Spoon batter into cups. Bake in 400-degree oven for 18 to 20 minutes or until light brown. Cool slightly on wire rack. Serve warm.
