Broccoli fit for a president


The winner in Campbell's "How to Get President Bush to Eat Broccoli" recipe contest is a telephone company accountant with an MBA from the University of California at Berkeley.

Priscilla Yee, who chose her house in Concord, Calif., because "the kitchen had 40 feet of counter space," picked up $7,500 last week for submitting the best of more than 3,000 entries in the national contest.

Ms. Yee also won a trip to Washington and a tour of the White House while the Bushes were vacationing. Her broccoli lemon sauce over steamed vegetables won because it tastes great, is easy to make and uses condensed cream of broccoli soup. And she thinks President Bush will at least "try it."

A version of Ms. Yee's recipe also appears in the Sept. 24 issue of Woman's Day.

$ Broccoli lemon sauce

over steamed vegetables

Serves 8.

6 cups boiling water

3 pounds small red potatoes, quartered

1 large sweet red pepper, sliced 1/2 -inch thick

2 cups broccoli florets

1 can (10 3/4 ounces) condensed cream of broccoli soup

1/2 cup mayonnaise

1/4 cup minced green onions

1 tablespoon lemon juice

1/4 teaspoon dried thyme leaves, crushed

In a 6-quart Dutch oven over high heat, steam potatoes in steamer basket for 10 minutes over 1 inch boiling water. Add pepper and broccoli; steam vegetables 5 minutes more or until tender.

Meanwhile, in a 2-quart saucepan over medium heat, combine soup, mayonnaise, onions, lemon juice and thyme. Heat through, stirring occasionally.

Arrange vegetables on 8 plates and pour sauce over vegetables.
