Stuffed Turkey Burgers
1/4 cup fine dry bread crumbs
2 tablespoons dairy sour cream
1/4 teaspoon salt
1/8 teaspoon ground white pepper
Dash ground sage
1 pound ground raw turkey
4 thin slices Canadian bacon
1/4 cup crumbled blue cheese
4 hamburger buns, split, toasted
1/4 cup cream cheese, softened
In a large mixing bowl combine bread crumbs, sour cream, salt, pepper and sage. Add turkey; mix well. On waxed paper, shape the mixture into eight patties, each about one-quarter-inch thick. On four patties, place one slice bacon and one tablespoon blue cheese. Top with remaining patties; seal edges.
Arrange filled patties in an 8x8x2-inch microwave-safe baking dish. Cover with microwave-safe plastic wrap. Turn back one corner to vent. Cook on 100 percent power for seven to nine minutes (low-wattage ovens: nine to 12 minutes) or until no longer pink, giving the dish a quarter-turn after every three minutes.
To serve, spread buns with cream cheese. Place patties inside.
Serves four.
