Skip the salt for one day


Restaurants today throughout Maryland will help their customers shake the salt habit during the American Heart Association's "Great Salt-Out." Participating restaurants will remove salt shakers from their tables for the day to prove that food doesn't need excess salt to taste good. May is National High Blood Pressure Month.

"The Great Salt-Out reminds us that the first step in lowering high blood pressure in some people is taking the salt shaker off the table" according to Dr. Michael Kelemen, president of the Maryland affiliate of the American Heart Association.

The association recommends that sodium intake should not exceed 3000 milligrams per day .One-half teaspoon of table salt contains 1000 milligrams of sodium

Golden Baked Chicken

2 1/2 pound frying chicken, cut in pieces, skined

1/4 cup margarine, melted

2 tablespoons lemon juice

1/2 teaspoon garlic powder

1/8 teaspoon garlic powder

Place chicken on a rack in a shallow baking dish.Combine remaining ingredients and brush on chicken with margarine mixture once or twice during baking.

Makes four servings. Each serving has 280 calories and 218 milligrams of sodium

Lemon-Barbecued Chicken

2 1/2 pound frying chicken, quartered, skinned

Dash each paprika and cayenne pepper

1/4 cup lemon juice

1/4 cup honey

1 tablespoon sesame seeds, toasted

Season chicken lightly with paprika and pepper. Combine lemon juice and honey, mixing thoroughly, set aside two tablespoons.Place chicken on broiler rack.Broil four to five inches from heat for 15 minutes.Baste occasionally with remaining lemon-honey mixture.Turn pieces over,baste and broil 15 minutes longer or until tender.Combine sesame seeds and reserved lemon-honey mixture. Spoon over chicken just before serving.May be grilled.

Makes four servings. Each serving has 255 calories and 79 milligrams sodium
