Top-of-the-Stove Baked Apples
1 6-ounce can unsweetened pineapple juice
1/8 teaspoon ground cinnamon
4 small cooking apples
4 pitted dates
In a medium saucepan combine pineapple juice and cinnamon. Remove core and a strip of peel from the top of each apple. Place apples in juice mixture in saucepan. Stuff center of each apple with one pitted date. Bring mixture to boiling; reduce heat. Cover and simmer ten minutes or until apples are tender when tested with a fork. To serve, spoon apples and juice into dessert dishes. Makes four servings.
