Pasta gets a bad rap among dieters. But if they’re not swimming in creams, cheeses and processed meat, pasta meals can be surprisingly light and nutritious in moderation.
Trattoria Amore owner Carlo Morra serves this spicy dish over a bed of linguine and cooks the shrimp in garlic for an added kick.
Ingredients:
6 jumpo shrimp, deveined and peeled
2 tablespoons olive oil
1 clove garlic
1/2 cup Italian peeled tomatoes, crushed
2 basil leaves
Pinch of salt
Pinch of crushed red peppers
Directions:
1. Heat olive oil and garlic in a pan. Remove the garlic when it starts to brown.
2. Pan sear the shrimp.
3. Combine with the crushed tomatoes, basil leaves, salt and crushed red peppers, then serve over a bed of your favorite pasta.
