Fried Oyster Sliders
Makes 1 serving
Ingredients:
½ cup vegetable oil
1 cup flour
2 tablespoons Old Bay
1 cup panko (Japanese bread crumbs)
1 egg
1 tablespoon milk
3 ¼-inch slices green tomato
6 medium shucked oysters (or from a jar of oysters)
3 brioche slider rolls, buttered
Shredded lettuce
Mayonnaise and sriracha or another Thai sweet chili sauce
Directions:
1. Place a deep pot over medium-high heat and fill with about 2 inches of vegetable oil.
2. In a shallow bowl, mix the flour and Old Bay until combined.
3. Place panko in a second shallow bowl.
4. In a third shallow bowl, mix egg and milk until combined.
5. Dredge the tomato slices first in the flour and Old Bay mixture, then in the egg wash and, last, in the panko.
6. Follow with the oysters, dredging in the flour, then egg, then panko.
7. Carefully add the tomato slices and oysters to the hot oil and fry until golden brown on all sides, about one to two minutes per side.
8. Remove tomatoes and oysters from oil and place on paper towels to drain.
9. In a dry, nonstick skillet over medium heat, toast the brioche buns until golden brown, about one to two minutes.
10. Stir in the mayonnaise with sriracha or sweet hot sauce, adjusting the ratio to taste.
11. Divide a handful of shredded lettuce between the three rolls, then top with the tomatoes and oysters.
12. Drizzle the mayonnaise mixture over the oysters — and get it while it’s hot!
