Greg Moore of Pueblo, Colo., was looking for a recipe for a hot lettuce salad with bacon and egg like the one he fondly remembers his mom and aunt making some 40 years ago when he was growing up in Hamilton. He has had no luck duplicating their dish and was hoping a reader might be able to help.
Darlene Hicks of Baltimore saw Moore's request and shared her mother's recipe for a hot lettuce salad. It comes from the "St. Thomas Aquinas Mothers Club Cookbook," published in September 1950. Hicks said her family loved this dish growing up and that her mother, Eleanor Hampshire, frequently served it over mashed potatoes.
This recipe is an example of a traditional, old-world sweet-and-sour recipe that the Pennsylvania Dutch were particularly well known for. While it may not be exactly what Moore was in search of, it certainly should come pretty close. The dressing on its own could also be used in a warm potato salad.
