Ravens football is back and this is the perfect tailgate recipe for enjoying the next home game. This burger has similar ingredients as a meatball, but is shaped into a burger patty. The burger is topped off with sliced pepperoni, melted mozzarella cheese and pizza sauce. This is not your ordinary tailgate burger.
Makes 6-8 burgers
1/4 sweet onion
5 cloves garlic
1/4 cup fresh basil
1/4 cup fresh Italian parsley
1.5 pounds 85 percent lean ground beef
3/4 cup shredded Romano cheese
4 small eggs
1 cup plain bread crumbs
1-2 packs sandwich pepperoni (about 4 large slices per burger)
6-8 slices of mozzarella cheese
1 can prepared pizza sauce
Soft burger rolls
The night before the tailgate, chop the sweet onion, garlic, basil and parsley. Place in a large bowl and add ground beef, shredded Romano cheese, eggs, and bread crumbs. Lightly mix the ingredients together and form 6-8 burger patties, depending on size. If the mixture seems too wet, add another 1/4 cup of bread crumbs prior to forming the patties. Keep the meatball burgers covered and chilled until you are ready to grill them at the tailgate.
When you arrive at the parking lot, light the grill for a medium-low heat and lightly oil the grates. Grill the burgers over direct medium-low heat until cooked (about 5-6 minutes per side depending on heat). Move the burgers to indirect heat (away from the coals) and apply 4 slices of sandwich pepperoni, 1 slice of mozzarella cheese and about 2 tablespoons of pizza sauce. Close the grill and let the cheese melt. Finally, grill each bun for about 30 seconds and then assemble the burger.
