Here's an appetizer you might not have encountered before. A juicy, beefy hot dog wrapped in bacon that's oozing cheddar cheese on the inside. I find it more fun to serve these as an appetizer with a toothpick rather than on the classic hot dog bun. These go great with a bowl of spicy mustard as a dipping sauce.
Bacon-wrapped cheddar dogs
Makes 10 servings
2 packs of all-beef hot dogs (at least 10 hot dogs)
The morning of the tailgate, make a small slit down the length of each hot dog. Be careful not to cut all the way through the hot dog. Insert the cheese stick inside of the hot dog and wrap with a slice of bacon. At the end of the hot dog, tuck the bacon in on itself so it won't come unraveled. Sprinkle the black pepper over top of the bacon wrapped hot dogs and place them in a container for transport.
When you arrive at the tailgate, set your charcoal grill for indirect heat. This means you should add your charcoal on the right side of the grill and leave the left side empty. After the coals are ready, line up the hot dogs on the left side of the grill away from the heat. Grill the hot dogs for about 15-20 minutes until the bacon looks almost cooked. Use tongs to briefly grill the hot dogs over direct heat for about 15-30 seconds to give the bacon some color and crispiness. Slice into 1 or 2 inch pieces and serve on toothpicks with spicy mustard as a dipping sauce.
