Frank Price of Timonium says he's been making Jewish Apple Cakes, a traditional dessert at Rosh Hashana, for Christmas for several years and in 2012 he made 27 cakes. "This was a lot of work and storing them became difficult to do," he says. "I thought I should be able to change my cake recipe and make cookies." And that's exactly what he did.

3-4 medium Granny Smith apples, peeled, cored and chopped into small squares
2 tablespoons sugar
1 tablespoon cinnamon
Preheat oven to 350 degrees. In a mixer, combine all dry ingredients well. Add eggs one at a time, stirring the batter after each. Add vanilla and orange juice. Add oil down the side of the mixing bowl slowly and mix well
Add apple mixture and combine well. Scoop teaspoons of batter onto cookie sheet. Bake 20-30 minutes.
