Hotel Revival, which will open at 101 W. Monument St. in Mount Vernon Place, will house Square Meal, a restaurant located inside the hotel, and Topside, a seafood-focused rooftop bar.
Baltimore native and chef Wilbur Cox will lead the kitchens at both restaurants, the hotel announced in a news release Monday.
Topside will focus on local seafood and Maryland craft beer, aiming for an “elevated beer hall” concept. The rooftop space will have 13 taps and feature more than 60 bottles and cans, the release said. Games, such as a large Connect 4 board and foosball tables, will be available for patrons to play.
Square Meal will serve breakfast, lunch and dinner, specializing in a “playful approach to American cuisine,” the release said. The restaurant will also include a coffee bar featuring Ceremony Coffee Roasters and a market with provisions like canned goods and cured meats.
Also on the roof will be a separate Garden Bar for private events.
Both restaurants will source their ingredients from Maryland farms such as Sapidus Farms, which harvests oysters from the Chesapeake Bay, and Prosperity Acres, a Southern Maryland goat and beef farm. The hotel also has a partnership with Highlandtown distillery Old Line Spirits.
Hotel Revival will be operated by San Francisco-based boutique hotel manager Joie de Vivre.
