A noodle bar that got its start at the Horseshoe Casino Baltimore is opening a second location in South Baltimore.
Ruby 8 Noodle and Sushi is planning to open at the mixed-use McHenry Row development in 4,200 square feet that previously housed Umi Sake, which closed earlier this year.
The space has housed a series of shuttered Asian restaurants. Red Parrot Asian Bistro occupied the storefront before Umi Sake.
Owned by Chil and Joyce Chong, Ruby 8's Locust Point location will serve a combination of Chinese, Korean and Vietnamese dishes. The restaurant will offer a raw bar and place a greater emphasis on sushi and Asian cocktails. It will also serve local and imported beers from 18 taps.
With about 130 seats, Ruby 8 will employ around 40 full- and part-time staff.
The restaurant joins a swelling wave of noodle bars in Baltimore, including Mi & Yu Noodle Bar in Federal Hill, Ejji Ramen in Belvedere Square and Pho Viet near Charles Center.
