Local brothers Khari and Shawn Parker have added a favorite family recipe to the offerings at Lexington Market.The pair opened Connie's Chicken & Waffles, named for their mother, who also works with them, in mid-June. Starting with a basic Belgian waffle and fried chicken, the family business is slowly expanding its menu as the eatery gets up and running.The concept was inspired by a favorite dish they ate growing up, Khari Parker said, and they have listened to customer feedback to increase their menu. Customers haven't been shy about letting them know what they like and don't like, he said."We get instant answers so we can instantly fix it," he said.The shop currently offers four types of Belgian waffles (original buttermilk, red velvet, cinnamon and gluten-free) that can be served with a variety of toppings, from chicken tenders to apples and whipped cream. Connie's offers two types of chicken — tenders or wings — and the shop plans on adding a baked chicken option, in addition to more fresh fruit toppings."We're slowly expanding," Parker said.Waffles range from about $5 to $9.Connie's Chicken & Waffles hopes to open additional locations after establishing the Lexington Market location, Parker said."It's a great testing ground for any new concept," he said.Khari comes to Connie's with a background as an IT manager, and Shawn worked in real estate construction before opening the eatery, so joining the food industry marked a big change for them."My brother and I always wanted to start a business together," Khari Parker said. "We had a desire to try something different."
