Chef Tim Dyson is making his exit from Baltimore and heading across the country.Dyson, who most recently consulted for Sobo Cafe and Sobo Market, is moving to Klamath Falls, Ore., in mid-September.The move was prompted when Dyson's partner landed a new job in Oregon, he said, and the time was right for him to make a change, too."I've been kind of wanting to get out of the city life a little bit myself," he said. "The food sources out there are a lot different, we're smack dab in the middle of a bunch of farms and that's kind of how they do it out there."A graduate of Le Cordon Bleu Program at the Pennsylvania Culinary Institute in Pittsburgh, Dyson has previously worked as executive chef at Dooby's, Bluegrass Tavern and Kali's Court (now Fells Point Tavern).Once he's settled in Oregon, Dyson plans to start a small catering operation and teach at a local community college's culinary program."I hope to bring a little bit of extra flavor to the plate, as we say," he said.Artifact Coffee is hosting a sendoff fiesta for Dyson on Friday from 6 p.m. to 9 p.m. featuring $2 pork, lamb and eggplant tacos, as well as chicken mole and pupusas.
