BricknFire Pizza Co., a Catonsville-based coal-fire pizza company, is the winner of a "Shark Tank"-style competition for restaurant concepts held by the Baltimore Marriott Inner Harbor at Camden Yards, the hotel announced on Monday.
Established in 2014 by Megan Lanasa and Trey Kirby, BricknFire is a mobile brick-oven pizza operation with a home base at The Breadery, a bake shop in Oella owned by Lanasa's parents. BricknFire also makes appearances at area farmers' markets and special events.
Starting this fall, BricknFire will have a home inside the Baltimore Marriott Inner Harbor at Camden Yards. On Monday, BricknFire was announced the winner of the hotel's Canvas competition, which invited entrepreneurs, chefs, bartenders and artisans from throughout the mid-Atlantic region to submit their dream restaurant concepts.
BricknFire was chosen by a committee of local restaurateurs, hotel owners, industry experts and food lovers. Marriott will work with BricknFire to suitably equip and build the space (up to a $50,000 investment), and lease terms will be negotiated after six months if the concept proves successful.
Baltimore is one of three incubator locations in the U.S. for Canvas, Marriott's food-and-drink concept lab. Described as the first of its kind in the hotel industry, Canvas has projects underway in Phoenix and Irvine, Calif.
