New Crofton restaurant will have poutine on the menu and a Mac Miller backstory

A new restaurant set to open next month in Crofton will bring a dish more commonly associated with Canada than Maryland, and deep connections to the music business.

AshlingKitchen & Bar is set to open April 2 at 1286 Route 3 S., the former location of longtime local favorite Christophers.

Owners Elise Letavish and Saeed Ashrafzadeh of Crofton said in a statement released Thursday they have combined experience from their existing business, Ashling Market and Catering, with ideas by executive chef Richard Sullivan.

For eight years, Letavish was the tour manager for Mac Miller, the music artist and producer. Miller died in September. In 2016, she and Ashrafzadeh opened their catering business to provide food for artists backstage at the Lyric Theater in Baltimore.

Much of the menu of AshlingKitchen includes items that will be largely familiar to area diners. But, poutine is something of a new item.

Poutine came out of Quebec in the 1950s, featuring French fries, cheese curds and gravy. It’s considered comfort food north of the border and has spread to some parts of the United States including restaurants around Annapolis.

The AshlingKitchen & Bar menu features three kinds of poutine. The Quebecer Poutine is the classic with a pork demiglace, Bayside Chesapeake Poutine features fries, curds, crab and Old Bay gravy, while Steak & Fries Poutine features fries, curds, beef tenderloin and pork demiglace. It shows up again as the Poutine Burger.

Ashling Kitchen and Bar plans to offer lunch, dinner, happy hour, late night dining, and private dining space for specials events. Plans for brunch are in the works. Visit AshlingCo.com for a look at the menu.
