After years of blowing up everywhere else, ramen finally started to catch on in Baltimore. But of all the shops that've opened, we can't stop going back to Ejji in the Belvedere Square Market. We've tried all three of their recipes—a thick and porky tonkatsu broth with pork belly, a light and summery corn miso broth with enoki mushrooms, and a Laksa curry/ramen hybrid with crispy tempura shrimp and clams—and loved them all, but if you really wanna go all-in, choose the create your own bowl route.
