A Very CP Friendsgiving: Baked pumpkin doughnuts

If you're still (sort of) sober, congratulations! You have survived Friendsgiving and shall be rewarded with dessert. This year, I am thankful for the delusion that baked doughnuts are healthy because DUH, they're not fried. By this rationale, it is also acceptable for everyone to eat at least a dozen. If you aren't the proud owner of a doughnut pan, great job on not being a Pinterest-obsessed asshole like me. A muffin tin will work just fine. But seriously, go buy a doughnut pan.

Baked Pumpkin Donuts

1/2 cup vegetable oil, 1/2 cup
3 eggs
1 1/2 cups granulated sugar
1 1/2 cups canned pumpkin
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1 1/2 teaspoons salt
1 1/2 teaspoons baking powder
Cinnamon sugar, 1 cup

Heat oven to 350 F.


In a large mixing bowl, combine all ingredients (except cinnamon sugar) until smooth.

Lightly grease your doughnut pan and fill each well until 3/4 full. Bake for 15 minutes.

Once donuts are cool enough to handle, gently toss them in the cinnamon sugar mixture.
