John Klaus, who stands behind the bar of The Prime Rib, is not a bartender—that's what you call the guy who handed you the can of Natty Boh from some cooler. John Klaus is a barman. For almost 30 years he has put on a tuxedo and worked that bar. On any night, he'll make hundreds of drinks from the 1,000 bottles of liquor on hand. He'll fill the 14 stools and turn the bar over several times. He knows the regulars, their drinks, and how they like them. And he always serves the lady first.
