Triple Cherries Jubilee
Serves 6

2 cups dark red cherries, pitted and divided
2 cups cherry juice
1/4 cup dried tart cherries
2 dark plums, diced
5 dates, chopped
1 vanilla bean, split lengthwise and seeds scraped
1 Tablespoon orange zest

To cook cherries:
Mash 1 cup of the dark red cherries into bite-sized chunks.  Set aside the other cup of whole cherries.  Combine the mashed cherries, cherry juice, tart cherries, plums, dates, and vanilla bean in a medium skillet.  Simmer until sauce reduces to 1 ½ cups, stirring occasionally, about 12 minutes.  Remove vanilla bean.  Add in reserved dark cherries and orange zest.  Serve warm or chill for later.

Black Forest Brownies
Makes 16 brownies

2 cups dates, pitted
1 cup hot water
1/2 cup dark cocoa powder
2 teaspoons vanilla, no-alcohol-added
1 teaspoon baking soda
1 (15-ounce) can black beans, no-salt-added, drained and rinsed
1 Tablespoon flax meal
1 1/4 cups unsweetened applesauce
1/2 cup dried tart cherries
3/4 cup whole wheat flour

Preheat oven to 350.

To make your batter:  
Soak the dates in the hot water for at least 10 minutes, to soften.  Place dates and water in a food processor with the cocoa, vanilla, baking soda, black beans, flax meal, and applesauce.  Blend until well combined.  Add the dried cherries and flour, and mix just until everything is combined.  Be careful not to overmix the flour or your brownies will be chewy.

To bake your brownies: 
Spread your batter into a 13” x 9” pan.  Bake at 350 degrees for 20-25 minutes, or until a toothpick inserted comes out clean.
