Ingredients:
16 oz prime dry aged New York strip steak
3 oz cracked black american peppercorn
2 oz pure olive oil
pinch of sea salt

Directions: Arrange peppercorns on plate and press raw steak into peppercorns. Turn burner on high and get pan as hot as possible. Add olive oil and steak almost immediately. Cook on each side for 8 minutes. Finish cooking in an oven at 500 degrees for 5 more minutes to make it medium rare.

Peppercorn Sauce

Ingredients:
pan drippings
1 oz cracked American peppercorn
2 Tbs Cognac
1 cup heavy whipping cream
pinch sea salt

Directions:
Use pan drippings from cooking steak, add cognac and reduce, add cream and salt to taste. Reduce down for 20 minutes.
