Baked Brisket with White BBQ Sauce

White BBQ Sauce

2 cups mayonnaise
2 Tablespoons ground black pepper
2 Tablespoons salt
6 Tablespoons lemon juice
6 Tablespoons distilled white vinegar
4 Tablespoons white sugar
1 teaspoon liquid smoke

In a medium bowl, combine the mayonnaise, pepper, salt, lemon juice, vinegar and sugar. Mix all together until smooth.


4 Tablespoons liquid smoke
4 Tablespoons Worcestershire sauce
2 Tablespoons fresh garlic
1/2 cup chopped onion
2 Tablespoons celery seed
5 pounds beef brisket

Combine liquid smoke, Worcestershire, garlic, onion and celery seed in small bowl. Place brisket in shallow non-metal dish, fatty side down. Pour marinade over meat; cover and refrigerate 8 hours or overnight. Preheat oven to 300 degrees F (150 degrees C). Remove meat from marinade and place in an ovenproof pan. Roast, fatty side up, 5 hours, until tender. Let meat cool enough to pull. Plate and generously top with BBQ sauce.
