Chef Omar got away with buying ingredients for not only a dinner for two, but desert for two for under 20 bucks. He did pull out some pantry items, but we figure you may have them in your pantry as well. So, here's the question, its not if you should make these recipes at home, the question is, can you pull it off for under $20?
Fresh Whole Wheat Vege Pasta
1/2 pound whole wheat spaghetti
1 medium zucchini diced
1 medium red bell pepper diced
2 large handfuls of leaf spinach
3 large cloves garlic
3 oz. extra virgin olive oil
1 link of Italian sausage
4 oz cheese (we used Magon)
Cook speghetti as directed on package. Heat the olive oil to a medium temperature, when crackling slightly add the garlic cloves. Cook until slightly browned. Add all the other ingredients and cook until everything appears done. Add your cooked spaghetti and toss until all ingredients are blended evenly. Place in bowls or plates and serve topped with shredded Magon cheese.
Citrus Tomato Dessert
1 pint cherry tomatoes sliced in half
The peel of 1 medium size orange (thinly sliced)
2 oz of table sugar
1 cup water
2 TBS balsamic vinegar
1/2 TBS white truffle oil (optional)
1 round loaf of crusty bread
shake of powdered sugar
Heat the water to a medium temperature in a saute pan. Add sugar and stir to dissolve. Add orange rind, cherry tomatoes and sugar and heat until carmelized. Add white truffle oil and 1TSB balsamic vinegar. When your ingredients are carmelized add thinly sliced pieces of the bread. Make sure your bread is toasty before removing from pan. Place the toasted bread on a plate, top with your caramelized mixture. Drizzle balsamic vinegar over the top. Top with powdered sugar. Enjoy!
