Turkey Chili

2 lbs ground turkey meat
1 large white onion diced
2 poblano chilis diced, seeds removed
2 cans of navy beans rinsed and drained
2 tbs. minced garlic
1 tbs. cumin powder
1 tbs. coriander powder
3 tbs. chili powder
pinch of cayenne pepper
1 can sweet corn rinsed and drained
1 can of refried beans
4-6 cups chicken stock depending on thickness desired
salt and pepper to taste

Brown off the turkey meat and set aside. Caramelize the onions, and peppers in a little oil with the garlic. Add the onions and garlic to the chili pot with the refried beans. Add the chicken stock. Stir the refried beans into the stock; the refried beans are a thickening agent. Add all the other ingredients and allow to simmer for 45 min to an hour. Garnish with chopped cilantro, cheddar cheese and sour cream.

Guinness Beef Steak Chili

1 can of Guinness Irish stout beer
2 lbs. of beef chuck steak cut into small pieces
¾ lb ground pork
1 large white onion diced
2 tbs. minced garlic
1 #10 can of crushed tomatoes
2 dried poblano chilies
2 jalapenos
1 tsp. cocoa powder
4 tbs. chili powder
2 tbs. cumin powder
2 tbs. coriander powder
salt and pepper to taste

In a separate pan caramelize the onions, and garlic and fresh peppers. In the chili pot brown off the beef and pork. Deglaze the pan with Guinness beer. Add everything else to the chili pot and mix together. Allow to cook four to five hours on low.
