It’s taken them five years to reach the top of this category, and general manager Spiro Koulouris believes he knows what got the restaurant there. “Our commitment is to be local, consistently local,” he says, “and we think it’s catching on.” That’s local as in locally grown or caught produce, chicken, seafood and even beef. And there’s that “super-quality pork” being delivered by Eaglewood Farm in Barkhamsted. “The word’s getting out,” says Koulouris.
