Free Mammograms Available

Today is National Mammography Day, and women everywhere are encouraged to make a mammography appointment for early detection and preventative purposes.
There are severalhealth facilities in the Central PA area that provide free breast health examinations and mammograms for women who are uninsured or under-insured.

Below you can find information including locations and services provided for women.
Many of these services are provided on an annual basis, however are encouraged during Breast Cancer Awareness month and especially on National Mammography Day.

PinnacleHealth Mammogram Voucher Program

Free services include pap smears and pelvic examinations, mammograms and biopsies, clinicalbreast examinations, breast and cervical cancer education, and follow-up medical care. Services are provided to uninsured, eligible women between the ages of 40 and 64. The program is offered through the state’s HealthyWomanProgram—a statewide, federally-funded initiative—and is coordinated by the Family Health Council of CentralPA. Today's fall flavored recipe is the Butternut Squash Risotto.
All of the varieties of Squash that you saw featured on the show are available at your neighborhood Stauffers of Kissel Hill store.


Butternut Squash “Risotto”

Serves 4 as an appetizer

Risotto is an Italian dish made with special rice, which is cooked in a unique way that yields a creamy, sauce-like texture, which is made even more luscious with the addition of lots of butter.  Here, Butternut squash is treated similarly, yielding a texture that is very close to risotto, just as rich, but with twice the nutritional content!  Enjoy, as is, for a spectacular starter or serve alongside your favorite meat or poultry, for an excellent accompaniment.

Ingredients:

2      Tbl.    Canola or Pure Olive Oil
½     ea.      Spanish Onion, small diced
½     ea.      Butternut Squash, medium sized, peeled & seeded, 1/4” dice
1      pinch  Nutmeg, ground
1      pinch  Cinnamon, ground
¼     C.       White wine, dry, such as Chardonnay
1 ½  C.       Chicken Stock
1      oz.      Heavy Cream
1      Tbl.    Butter
¼     C.       Parmesan Cheese
1      Tbl.    Chives, minced
To taste      Kosher or Sea Salt and Black Pepper

In a medium sauté pan, over medium heat, sweat onions in oil till translucent.
Raise heat a touch and add the squash, nutmeg and sage and stir well.
Sauté the squash briefly, to caramelize, and then deglaze the pan with the wine.
Reduce the wine by half and add the stock.
Simmer, stirring occasionally, until the stock is mostly absorbed and the squash is just tender, but still a little al dente.
Add the heavy cream and heat through. 
Remove from the heat and mount in the butter.
Sprinkle with chives and cheese.
Season to taste and serve.
