A Slice of Summertime

Makes about 12 servings
- 1 package (18.25 oz.) white cake mix
- 1 3/4 cups cubed seedless watermelon (about 16 oz.), pureed or 1-1/3 cups water
- 3 tablespoons oil
- 3 egg whites
- mini chocolate chips
- Red-Red Icing Color, as desired
- White Buttercream Icing
- White Rolled Fondant (optional)
- Leaf Green Icing Color
- Green FoodWriters (optional)
Preheat oven to 350°F. Spray 9-inch round cake pan with vegetable pan spray. Prepare cake mix using pureed watermelon (optional) in place of water. Add oil and egg whites. Gently stir in icing color to desired color; add mini chips. Pour into prepared pan. Bake 35-40 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes. Remove from pan and cool completely.
Remove crown from cake. Tint buttercream icing leaf green. Ice outer edge of layer with tinted icing.
Optional decorating technique:
Remove crown from cake. Ice outer edge of layer about 1/4-inch thick with white buttercream. Color fondant light green; roll out 1/8-inch thick. Cut a strip 28 inches long x the width of the cake layer; attach to cake layer over buttercream. Add stripes using green FoodWriter.
