Provenance Food & Wine - 2528 N. California and 2313 W. Leland, Chicago
2 cups cherry juice (or 1 lb of pitted cherries & 2 cups water)
2 cups sugar
1 sprig of thyme
Combine all ingredients in a pot. Bring to a boil. Lower heat and simmer, covered, for 20 minutes. Strain out cherries, if using, and thyme. Cool in refrigerator. Transfer to a bottle or jar. Use in 2 weeks.
