Homemade Steak Sauce
Serves 8

4 shallots, peeled
4 carrots, peeled and diced
1 garlic clove peeled
1/2 jalapeno pepper, seeded
2 plum tomatoes, seeded and diced
3 Tbs tomato paste
4 tsp soy sauce
1 dash Worcestershire Sauce
3 Tbs orange juice
1 tsp tamarind paste
21 oz beef stock
1 1/2 Tbs red wine vinegar
2 tsp sage, chopped
1 1/2 Tbs parsley, chopped
olive oil, to taste
salt, to taste

Toss the shallots, carrots, garlic, tomatoes and jalapenos in olive oil. Season with salt and pepper. Roast the vegetables in a 375 degree oven for 20-25 minutes or until caramelized. Combine all the ingredients in a large food storage container and blend until pureed and smooth. Taste and adjust seasoning. Serve Warm. Can be cooled and stored in a food storage container for later use in the refrigerator.
