Banana Bread French Toast

Banana Bread

Ingredients:
8 cups all purpose flour
4 tsp baking soda
1 tsp salt
2 cups of butter (melted)
3 cups of brown sugar
8 eggs
9 cups mashed bananas

Directions:
Mix the last 4 ingredients together in a blender with a paddle until well mixed. Add all of the dry ingredients together in a separate bowl, then add to mixed ingredients in mixer until incorporated. If you over mix it, bread will be tough.

 

Dipping Batter

Mix in a bowl until incorporated:
1 oz vanilla extract
2 cups heavy cream
1/4 cup sugar
1 cup heavy cream


Candied Pecans

Ingredients:
8 egg whites
1/4c brown sugar

Mix together until white stiff peaks form. Then mix in pecans. Spread onto a baking sheet and bake 18 minutes at 225 degrees. Let cool.

 

Caramelized Baby Plantains

Baby Plantains

Directions:
Slice in half lengthwise. Coat the flat portion of the bananas with granulated sugar. Brown with a torch or cook in a pan or flattop for 30 seconds to caramelize the sugar.


Banana Bread French Toast

Ingredients to make banana bread French toast

2 slices of thickly cut Banana Bread
1 oz caramel sauce
2 oz whipping cream
dried plantain chips
baby plantains

Heat flattop to 350 degrees or a pan on medium high. Add 1 Tbs of butter to pan and melt. Dip both pieces of banana bread into the dipping batter. Coat gently. Grill both sides for 1 minute each. Place on plate. Drizzle caramel sauce on top. Add plantain chips, whipped cream and place caramelized baby plantains on top of whipped cream. Dust with powdered sugar and serve.
