Ranch N' Bacon Butternut Fries (235 calories per serving)-makes 2 servings

You'll Need: 2 baking sheets, nonstick spray, small bowl, vegetable peeler, skillet or microwave-safe plate

Prep: 25 minutes

Cook: 40 minutes


1/3 cup fat-free sour cream

1/2 tablespoon ranch dressing/dip seasoning mix

One 2-pound or half of a 4-pound butternut squash (20 ounces once peeled and sliced)

1/8 teaspoon coarse salt

4 slices turkey bacon

Optional:chopped scallions
