Garlic and Lemon-Pepper Roasted Chicken

Ingredients you will need are...

Small roasting chicken (about 4-5 lbs.)

Olive oil-small bottle is fine

Small jar of minced garlic-you'll need about 3-4 tablespoons

1 lemon

Black pepper (freshley ground is best, but pre-ground will do)

Utensils needed would be...

Covered stoneware baking dish

sharp knife to cut the lemon in half (and to trim the chicken if you'd like-not necessary)

spoon for the minced garlic (even a plastic one from the breakroom is fine)

cup with spout (or nozzle for bottle of olive oil) or pastry brush (to apply olive oil), heck a small paint brush would be fine too

I like using latex gloves when working with raw chicken. If you'd like, trim the fat off chicken and loosen the skin a bit

Using a spouted cup or a brush put olive oil under the skin of the bird, rub it around so as much of the chicken is covered

Cut the lemon in half and squeeze juice onto the chicken and place the lemon skins into the cavity of the bird

Pat minced garlic under the skin and sprinkle black pepper onto the chicken making sure you get most of it under the skin

Sprinkle kosher salt all over the bird

Carefully place the chicken into the bottom of the stone baking dish and cover
