    To understand what Fred Lazarus accomplished during his 35 years as president of the <a href="http://findlocal.baltimoresun.com/mount-vernon/home/university/maryland-institute-college-of-art-baltimore-school-educational-facility">Maryland Institute College of Art</a>, one need only look at the gleaming concrete-and-glass structure housing the school's Brown Center for new media. The rakishly angled building rising above the school's Mount Royal Avenue campus symbolizes the future of both art and higher education in America as surely as the stately neoclassical building across the street from it reflects its past. Mr. Lazarus, who announced this week that he will step down as president in 2014, had the genius to see that future and the skill to build it in Baltimore.

Luckily in the past few years, local farmers have been producing chickens that have amazing flavor and texture (and that are raised in much better conditions than typical supermarket birds).     The latest argument from the proponents of a ballot question that would allow a sixth casino and table games in Maryland is a familiar one: Failing to legalize more gambling in the state will mean hundreds of millions of dollars flowing out of Maryland and into West Virginia, where the money will boost the economy and pay for schools. It was a key element of the campaign to legalize slots in Maryland four years ago, and it has intuitive appeal. If Marylanders are gambling anyway, why not have them do it here?

  19. From the Harvest: cider-brined pork chops

    Most people go to farmers' markets in search of that perfect tomato or apple, meats are also sold at many of them. That's right, beef, chicken, pork and even bison can be found in the stalls at most farmers' markets in the area. Pork is among my favorites. Fatty, lean, smoked or plain, I can eat pork in countless ways. I'm even a fan of the parts that most supermarkets don't sell, such as the ears, jowls, feet and tails (which all can be bought at the farmers' market), but I'm a sucker for the classic pork chop. This recipe is a classic French dish that is slanted towards the fall. The brine, a salt and sugar mixture, infuses cider into the meat while the mustard sauce is a contrast of creamy and piquant flavoring. The use of two types of Dijon, creamy and grainy, is the key to the sauce.
