Food from the Ozark Empire Fair: sea dogs and deep fried Snickers
2 long 3-ounce strips of fresh cod
1 teaspoon of baking powder
(to taste) salt and pepper
3/4 cup of water
1 cup of prepared cole slaw
1/2 cup of mayonnaise
2 teaspoon of prepared pesto
1 French bread loaf, cut in half
2 cups of oil for frying
Combine water, flour, baking powder and salt and pepper; let rest for five
minutes. Submerge cod strips in batter and fry in 350-degree oil until
golden crispy and cooked all the way through.
Combine pesto and mayonnaise. Cut each half of the French bread loaf in
half lengthwise leaving a hinge like a hot dog bun. Place cooked fish
inside bread. Spread half of the cole slaw on top of each half of the
bread, and drizzle pesto mayonnaise on top of cole slaw.
Recipe serves two
Deep fried Snickers
2 cups of prepared funnel cake or pancake mix
10 Mini Snickers
2 cups of frying or vegetable oil
Completely coat all sides of snickers bar in batter. Submerge coated
snickers in 350-degree frying oil until golden brown and crispy on all
sides. Let cool for five minutes.
Recipe serves five.
