Dessert Diva Danette Randall appeared on Daybreak on the Deuce Monday, 5/11/2009 to tempt us with Blackberry Apple Crisp with Almond Whipped Cream.

4 apples (that have been cored and cut into 1/2 inch slices)
3 cups blackberries
2 tbls. lemon juice
1/2 cup sugar
1 tsp. cinnamon
1 1/2 cups flour
1 1/2 cups brown sugar
1 cup oatmeal
2 tsp. cinnamon
pinch of salt
1 cup unsalted butter

  • preheat oven to 350
  • lightly grease a 9x13 inch baking dish
  • in large bowl, combine apples and blackberries with lemon juice, sugar and cinnamon. Toss well and set aside.
  • in another large bowl, toss flour, brown sugar, oatmeal, cinnamon and salt. Cut in cold butter with 2 knifes, food processor or your fingers until it is crumbly.
  • pour fruit mixture into baking dish and make sure it is evenly distributed.
  • spread topping evenly over fruit.
  • bake for 40-45 minutes until fruit is bubbly and top is golden brown.
  • take out and let cool. (can serve slightly warm)
  • before ready to serve, beat 2 cups whipping cream, 1/2 cup powdered sugar and 1 tsp. almond extract until stiff peaks form.

When ready to serve, scoop a piece of crisp onto a plate and dollop the almond whipped cream on top. ENJOY!
