I-Rish It Was Always St. Paddy's Day!

   Aside from my kids, there's nothing I'm more proud of than being Irish. We hail from the County Cork and have been known to pop a few along the way as well.  My large extended family is a wildly wonderful bunch of passionate people who love, work and play hard.  I am very blessed to have been born under the Shamrock.  Especially, in these modern times.

   We have to thank all the Irishmen and women who were willing to roll up their sleeves and build our railroads and bridges, and work their way from the lowest rung of society all the way to the Oval Office.... with little more than a fighting spirit.  Escaping the poverty and potatoe famine in Ireland, we came over in droves (millions really) and quite literally help build this country's foundation, which is good, because the Irish are rock solid.  In devotion...in loyalty and often in the head. 

   What we're not known for is great food.  I'm not saying there isn't any, but let's face it...no one goes to the pubs for the eats.  They go for a pint of good cheer and the spinning of Irish tales.  So, here's a story of my own.  As much as I love being Irish, I hated peeling potatoes over and over as a child at meal time and even come St. Paddy's Day...I'm about to commit a cardinal sin here: I HATED CORNED BEEF AND CABBAGE!  (I finally admitted that fact to my mom today...it didn't go well.  And since the Irish don't forget the grudges, I'm in for a treat.)

   So, I called in an expert to put a twist on the traditional Irish staple:  corned beef.   Who else but "Sam the Cooking Guy" could be so brave and bold to tackle the task and work with flammable me in the kitchen.  Be sure to watch the video of Sam and I "cooking" together.  I put cooking in quotes because I'm really more like a barnacle than sous chef.  There's also a tastey adult version of the Shamrock Shake.  Not only does it go down easy...it is easy.  And there's nothing more the Irish like than a fine tasting drink!
