When Tom Douglas opened his New Orleans-meets- barbecue restaurant 20 years ago, the wing craze was in its infancy. Somehow, Chez Porkys made its name with sweet and sour raspberry wings. Other flavors include lemon, Asian, Jamaican jerk and Buffalo-garlic. Wings can be ordered with celery, ranch or blue cheese dressing, but the combination of wings and rice is the big draw.
