Silver Diner to bring classic burgers and shakes to Columbia in September

It’s taken half a century, but Columbia’s menu of restaurants will finally include a diner, and it’ll be Silver. “We’ve been eyeing Columbia for about 10 years,” says Matilde Ott, Silver Diner’s vice president of marketing. When the former location of Mimi’s Cafe became available, “we snatched it.” There may be a little less silver than in the chain’s 16 other venues — less stainless steel and more tile, less nifty ’50s and more Art Deco style. But it’ll be a 21st century menu, emphasizing fresh and local, organic and hormone-free ingredients, and offering proven winners such as bison huevos rancheros and classic diner burgers and shakes. Target opening date is early September.
