Ingredients:

  2 Large Sweet Potatoes

  1 uncooked 9-inch deep dish pie shell

  ¾ cup sugar

  ½ tsp salt

  1 tsp ground cinnamon

  ½ tsp ground ginger

  ¼ tsp ground cloves

  A few drops of vanilla (if desired)

  2 large eggs

  1 can (12 fl oz) Evaporated Milk

 

Directions:

  Peel potatoes, wash off & slice into chunks

  Boil potatoes for about 45 minutes (or until soft), then mash up

  Mix sugar, salt, cinnamon, ginger, cloves in small bowl

  In large bowl, stir eggs, vanilla & sweet potatoes

  Stir in sugar, salt, cinnamon, ginger & cloves mixture

  Slowly stir in evaporated milk

  Once mixed, pour into pie shell, bake 15 minutes at 425 degrees

  Then bake about 35-40 minutes at 350 degrees
